Black Bean Hummus recipe
This south-of-the-border hummus is a must-try for any lovers of Mexican food. Made with black beans instead of chickpeas, and perked up with lots of spices, lime, and kick, this creamy dip will work great served with nachos, tacos, and inside burritos.
Ingredients List:
1 (15-ounce) can black beans, drained, rinsed
¼ cup fresh lime juice
2 tablespoons Tahini
2 tablespoons chopped fresh cilantro leaves
2 garlic cloves
1 jalapeno pepper, seeded, chopped
2 teaspoons cumin
½ teaspoon salt
¼ teaspoon paprika
2 to 4 tablespoons water, as needed
2 tablespoons roasted pumpkin seeds (pepitas), for garnish
Directions:
1. Place black beans, lime juice, Tahini, cilantro, garlic, jalapeno, cumin, salt, and paprika in a food processor; pulse until smooth.
2. With machine running, add water until mixture thins to desired consistency.
3. Sprinkle with pumpkin seeds and serve.
