Roasted Garlic Hummus recipe
Roasting garlic takes the raw, sharp bite out of it while adding a smooth, sweet quality. Pureed into a traditional hummus, the result is purely addictive.
Ingredients List:
1 head garlic, unpeeled
2 (15-ounce) cans chickpeas, drained, rinsed
¼ cup fresh lemon juice
3 tablespoons chopped fresh basil
2 tablespoons Tahini
1 tablespoon olive oil
½ teaspoon salt
½ teaspoon black pepper
2 to 4 tablespoons water, as needed
Directions:
1. Preheat oven to 425°F. Slice off the top ½-inch of the garlic head, keeping cloves intact. Wrap in foil and cook in oven until very soft, 45 to 60 minutes. Carefully remove, allow to cool, and unwrap.
2. Place all ingredients except water in a food processor; pulse until smooth.
3. With machine running, add water until mixture thins to desired consistency.
